How to make Nutmilk from Almonds, Hazelnuts, Coconut and more...

Don't get me wrong... I enjoy a glass of goats milk, but I also enjoy variety in my diet and going dairy free to give my system a re-set every so-often. 

 

With that being said i'm just disappointed every time I look at the ingredients of pre-made alternative milks at the health food stores. 

 

The average ingredients look something like this...

 

 

 

 

 I'm completely grateful and feel privileged to be able to access these pre-made milk products and will use them on occasion, but if I can avoid the gums, stabilizers, added sugar, synthetic vitamins, natural flavors and what ever else they sneak in there, I do. 

 

Especially because making my own alternative milks at home is easy! At least for me... someone who spends most of her time in the kitchen...

But I'm certain it can be easy for YOU too! 

 

Some of my favorite alternative milks to make:

Hazelnut coconut milk

Hemp seed with dates

Almond

Pecan

Coconut 

Sunflower

Oat

Pumpkin seed 

 

The following recipe will make 3 cups of milk, I usually double it and make 6 cups at a time so I can make it once and enjoy it twice!

 

Ingredients 

This recipe makes 3 cups of milk: 

1 cup nuts or coconut chips, seeds of your choice etc. (soaked for 2-12 hours)

3 cups filtered water. (I use a FEMA rated Berkey filter, because I live on an Island off of another island, off of another island...)

 

Options for sweetening (all optional)

3 dates per 1 cup of nuts

Stevia drops

Monk fruit powder

 

Equipment 

Bowl to soak nuts in

High Speed blender 

Nut Milk bag or Juicer 

Fine mesh strainer or nut milk bag

Wide mouth mason jar for storage

 

Directions 

  • soak the nuts, coconut chips or seeds you are making milk out of in a ratio of 1:3, 1 part nuts, 3 parts water for 2-12 hours. 

  • Strain off the water and add the nuts to your blender 

  • Add the sweetener of your choice to the blender 

  • Add 3 cups of water for every 1 cup of nuts

  • Blend on high speed until fully incorporated

 

This is the fun part. 

 

If you are using a nut milk bag...

 

Note* Nut milk bags will always work... I've found that the juicer only works best for blended milks that have a lot of fiber material... so milks made with coconut, and any other nuts, even sunflower seed etc. 

  • Put it over a wide mouth jar or bowl and pout the blended milk into the bag and prepare to catch the filtered contents in the jar or bowl. 

  • Squeeze the bag or hang it somewhere to let it drip into the bowl or jar. 

  • Be sure to squeeze the bag to get every drop of milk!
     

If you are using a juicer...

 

Note* the juicer has not worked for me when making hemp seed milk, there isn't enough fiber material and the juicer tends to back up, so I use a nutmilk bag specifically for hemp seed milks...

  • Pour the blended milk thought you juicer with the finest mesh strainer it comes with. 

  • Watch the magic happen as the juicer does the work for you.

  • Store your milk in a glass container in the refrigerator and enjoy within 4 days of making. If left for too long it will go sour, just like dairy milk...
